How do you Establish Map Control?

I've never fully understood how this works in any shooter really. It's a pretty stupid question but how would someone go about establish and maintain it? What thought process do you go through to at least make an attempt to gain map control?

If I understand your question correctly, map control is where you have free reign to do whatever you'd like while the enemy is blocked off. In splatoon, map control is obvious since you can see the colors clear as day. Map control and Turf control are more or less the exact same thing

You put the enemy into a situation where they're at a disadvantage when entering your territory. Either they avoid doing it and you run down the timer, or they have to try and risk getting killed.
