I see players on twitch like PK Fuzzy going into the shop and buying every item every time its possible. Is this something I should be doing as well? Keep buying gear and ranking it up so I can scrub them later for the ability chunks? Sorry I got no idea any help would be awesome!

Since gear is pretty cheap, yes, it's usually a good idea. I didn't do it in Splatoon 1 and regretted it, since sometimes later on I would decide on a new gear setup, but I'd passed up the opportunity to buy the right gear for it when it was in stock. Not so much for the ability chunks, since you could do that with one piece of gear over and over, if you wanted to.
