In the recent Nintendo Direct, we learned that gear will work like this:
One main slot per gear
-This ability slot is locked. Whatever ability this piece comes with cannot be re-rolled
Maximum of 3 slots per gear (more slots are purchased with super snails)
-These 3 slots can be re-rolled. It will cost 1 super snail to re-roll abilities.
It was not stated if you can re-roll individual abilities, if they stack, or if you can get duplicate abilities on a piece of gear

In the above link is all known abilities in Splatoon. Some of them are not yet known (Haunt, Comeback, etc).
This thread is for discussion of necessary gear abilities as well as specific weapon gear combinations.
Necessary gear abilities (opinion):
Ink Saver (Main)
Ink Saver (Sub)
Ink Recovery Up (this was default in the demo)
Quick Respawn (this was default in the demo)
Special Saver (this was default in the demo)
Bomb Range Up
Run Speed Up
Swim Speed Up
Quick Super Jump
Above is what I think will be necessary for competitive gear. There's also other great abilities such as Steath Jump/Stealth Swim, Defense Up, Ink Defense Up, Damage Up, etc.
