Edit because I don't understand how this works either apparently. Your clock will say 3 pm in New York when it starts.

Yeah, because you get that since that's your time zone. That is the start time, for those who live in the eastern time zone. It'll start at 3 PM Eastern, which is 12 PM Pacific, when you put the time zones into place.
